The summer after my junior year in college, what seems like eons ago, I worked as an au pair in Paris for a family with three little boys. My host mother, Valérie, loved to cook and would frequently enlist my help in the kitchen once the kids were in bed. Her French apple cake, with chunks of tart apples nestled in a tender, buttery rum cake, is a longtime favorite of mine. Similar to many homemade French desserts, like clafoutis, madeleines, or crepes, it is the essence of simplicity.

Ella helped me gather a big bowl of these delicious apples. They are sweet and snappy with a delicious tanginess. I have never baked with them before and my mom and sister were over for dinner so it was the perfect reason to give it a try! I made my favorite apple pie recipe, the Apple Crumb Pie from our fall cookbook. I love this pie because it literally takes me 15 minutes to assemble and it is always a crowd-pleaser.

Rustic Gala Apple Tart Recipe

The result… everyone loved the pie with Galas! I am so glad to know it is a great variety for eating AND baking. (I will be trying it in applesauce tonite.)

5 cups apples, sliced, peeled 1 (9-inch) Eckert’s bakery unbaked pie shell 1 cup sugar, divided 1 tsp. ground cinnamon 3/4 cup flour 1/3 cup cold butter

Preheat oven to 450°F. Arrange apples in bottom of pie shell. Mix 1/2 cup of the sugar with cinnamon; sprinkle over apples. Mix remaining 1/2 cup sugar and the flour in small bowl; cut in butter with pastry blender or 2 knives until mixture forms pea-sized crumbs. Sprinkle over apple mixture. Place pie on a sheet pan. Bake 10 minutes. Quick & Easy Apple Crumble Recipe

Apple picking is my all time favorite fall activity. Well, that and making apple cider slushies, my kids adore them and for the adults I make this warm spiked apple cider topped with a mountain of whipped cream.

I typically like to bake with Granny Smith apples when I am making any type of apple desserts, but those aren’t harvested until October. What they did have though was trees full of beautiful, red gala apples. So instead of Granny Smiths we ended up with an abundance of galas.

While I love the cinnamony, gooey apples in this recipe, I have to say that the homemade apple crisp topping is my favorite part. I could eat a bowl of that all on its own. Not many things can beat fresh, creamy butter cut into old fashioned oats, brown sugar and cinnamon.
