Salmon Recipes For Pressure Cooker

Salmon Recipes For Pressure Cooker

This is a versatile and fuss-free method of cooking salmon in the Instant Pot, whether you’re using fresh or frozen, skin on or off. This simple recipe yields tender and flaky salmon, paired with a flavorful chili-lime sauce. Great seafood dinner option for keto, low carb, and paleo diets.

PHOTOS NOTES & TIPS(1) Fresh Or Frozen Salmon. Either works. I personally prefer salmon cooked from fresh rather than from frozen; it yields a better texture and tenderness. If you have the time, I recommend defrosting your frozen salmon overnight in the refrigerator, rather than cooking directly from frozen.

Easy

(2) Salmon Cut & Thickness. Select salmon cut from the center rather than from the tail. This is important because you’ll have more evenly sized fillets, which will cook uniformly. Also, the pressure cooking time listed in the recipe is designed for center-cut fillets, which are about 1 inch thick in the thickest part, whereas the tail is much thinner. If you use a tail piece, you may have trouble fitting both fillets on the trivet without overlapping each other.

(3) Salmon Skin. You can use skin on or off. If yours has skin attached, keep it on because it will make it easier to transfer the cooked salmon from the Instant Pot onto serving plates; the skin helps hold the flaky salmon together. It will also make the salmon less likely to stick to the trivet. Don’t worry about removing the skin later — once cooked, the skin falls off effortlessly.

(5) Pressure Cooker Equipment. I use a 6-quart Instant Pot. For the steam rack, I use the trivet that came with my Instant Pot, positioning it with handles resting on the sides of the pot.

(6) Nonstick Oil Spray. If you are using skin-off salmon, spray the trivet with a nonstick oil spray to help release the salmon after cooking. This is usually not necessary for skin-on salmon which releases easily.

(7) Pressure Cooking. Before cooking, remember to seal the pressure cooker by turning the pressure knob from “venting” to “sealing.” After cooking, to perform a quick pressure release, turn the knob back to “venting” and wait for the pressure pin to drop before uncovering. If you scale the ingredients up or down to accommodate a different number of servings, the pressure cooking time remains the same.

(8) Serving. Handle cooked salmon carefully because it’s soft and flaky, and may fall apart or stick to the trivet if you’re not careful. Serve promptly because salmon will cool down quickly. You can serve with side dishes like oven roasted vegetables or creamed spinach.

Salmon is one of my go-to proteins when I’m looking to fix a dinner that’s on the lighter side. Traditionally I’ll bake it in the oven on a sheet pan with some veggies arranged around it, which makes for the perfect easy dinner with minimal cleanup.

But, I wanted to change up my salmon routine and put one of my favorite appliances to the test in making it – the Instant Pot.

I know that I’ve got a lot of dedicated pressure cooker fans out there. In fact, out of my top 10 recipes on the blog, five of those are instant pot recipes.

I recently discovered this Silicone Pressure Cooker Rack by OXO. I love that because it’s made from silicone, the food doesn’t stick to the rack. Plus, it’s super easy to clean, and dishwasher safe. It can also be used as a trivet, which essentially means you’re getting two kitchen tools in one.

Lemon butter sauce is the perfect accompaniment to the pressure cooker salmon, and you can make it on the stovetop in the same amount of time that it will take to cook your salmon.

This sauce comes together in less than ten minutes. Simply stir your ingredients together in a saucepan and keep an eye on the flavors. Don’t be afraid to taste your sauce while you cook to ensure your flavors are well balanced!

First, boil wine, the shallot and lemon juice in a small saucepan over high heat until the mixture is reduced to 1/4 cup. This should take about 6 minutes.

If you don’t feel like dirtying one more pan, you could also make this sauce in the pressure cooker using the SAUTE function. Just remove the cooked salmon to a plate, empty the cooking liquid, and proceed to make the sauce in the pressure cooker.

Why? First, I find that vegetables like broccoli, cauliflower or carrots tend to have a strong aroma when pressure cooking. That means the salmon ends up tasting like the veggies.

Instant Pot Salmon (fresh Or Frozen)

Second, vegetables will cook much faster than the salmon, meaning that your vegetables will become mushy if cooked for the same amount of time as the salmon.

After your salmon has finished cooking, remove it to a plate. Then arrange your vegetables in a steamer basket, like this one, and add them to the pressure cooker.

Using the same cooking liquid from the salmon (since it’s already hot), seal the lid and set the cook time to ZERO minutes. The pressure will build again (but quicker this time since the liquid is already hot) and then the timer will go off.

One of the main reasons why I don’t cook fish at home very often is that I really can’t take the lingering smells of fish in the house.

I used to cook pesto-covered salmon out on the grill because I love salmon but I couldn’t stand the whole house smelling of fish for days on end.

Vietnamese Inspired Instant Pot Or Oven Salmon

Cooking fish in the Instant Pot or pressure cooker really helps reduce the fish odors in your home—as long as you remember to rinse the steamer rack and inner liner of your pressure cooker immediately after cooking.

I have tried making fish in the Instant Pot in a variety of ways and what I have found is that Pot-In-Pot works best so as to not overcook the fish. I have a few other recipes where I’ve done this, such as this Coconut Curry Shrimp.

It also works if you put the fish in a steamer basket, as I did with the Ginger Scallion Steamed Fish recipe.
